Okay, today we get a little exotic. Fried plantains. If you want sweet plantains, you need to let the fruit riped until the skin is BLACK. Yes, I said it… black. It should feel very soft at the touch for natural, sweet yumminess. I fried these in coconut oil until golden brown. Let them drain on a towel and sprinkle with cinnamon. One caveat… you gotta eat them the same day you cook them or they aren’t yummy. Try it!
